Bonnie’s Blackberry Cobbler

 

 

 

 

   This recipe came from a co-worker, Bonnie. She works here at the office and this was her mothers recipe. She made it for us here and it is a real keeper and so simple. For those of you who have old recipes you know they used a lot of terms like dash, sprinkle or dab. Deciphering it can be a real challenge. I tried this myself and it worked great. I just wasn’t sure about this pie crust so I made my own. Bonnie admitted she buys Pillsbury already made ones. She feels they are the best. Also when it comes to the filling the amount of sugar will depend on the amount of berries you actually get in your pan and what kind they are. I just went by a guess on how she said to do it and it worked out great! Better than mine ever has been. 

   Pie Crust

   In a bowl, 1 cup shortening, 1/4 tsp salt, 1/2 cup water and stir. Cut in some flour then make a ball and knead a little bit. Roll out the dough.

   Makes 2 pie crusts (Hint) It is best to use a deep dish for this recipe. The berries stay very juicy!

    Filling

   Fill the pie crust close to the top and level out with berries. Sprinkle with 1/2 cup granulated sugar. Yes that’s all. Top with following topping.

   Topping

   In a bowl, melt 1/4 cup butter and add 1/2 cup granulated sugar add 3/4 cup flour. Use a fork or a pastry blender to cut in until large clumps form. (If you don’t use all this topping you can put it in a bag and freeze)

  Bake at 350 until juicy and topping is just barely turning colors.

 I know it sounds  too easy to be very good,  but trust me it is just delicious. Even I didn’t mess this up!
